Acorn Squash with Orange Pecan Stuffing
This acorn squash with orange stuffing side dish is a definite crowd pleaser. It’s got it all, from the taste, to the look, to the wonderful aroma- simply delightful! Need I say more?

2 small acorn squash
1/4 cup frozen orange juice concentrate, thawed, not diluted
2 tablespoon brown sugar
1/4 teaspoon ground allspice
Cooking spray
1/3 cup corn flake crumbs
1 1/2 tablespoons coarsely chopped pecans
2 tablespoons low fat butter, melted
Directions:
Scrub acorn squash with soap and warm water. Cut squash vertically in half. Scoop out the seeds. Place squash, face-down, in a 9x13” baking pan. Add enough water to cover a 1/4” of the pan. Bake squash, uncovered, at 400°F for half an hour or until soft. Drain water and allow squash to cool slightly. Scoop out the inside of the squash into a bowl, leaving 1/4" around the shell. Add orange juice, brown sugar, and allspice to the scooped out squash in the bowl, mash and stir well.
Cut a thin slice at the bottom of each shell, to keep it leveled. Coat baking pan with cooking spray and place squash, face-up in the pan. Spoon some squash mixture into each shell. Combine remaining 3 ingredients and sprinkle over squash. Bake, uncovered, at 400°F for 15-20 minutes, just enough to heat it through.
