Why stop celebrating New Year’s at the beginning of January when the Chinese New Year festivities don’t even begin until a few weeks later – and last over two weeks? Give your clients a reason to proclaim this Year of the Dragon with a Black Dragon. To make this impressive drink, create layers in a Libbey shot glass. Fill the bottom third of the glass with peppermint schnapps and the middle third with Kahlua. Top it all off with one-third of a shot of scotch. The layers should stay separate, and by the end of the drink the schnapps have a cooling effect on the burning sensation of the scotch layer.

2. Leap Frog

A day that comes only once every four years is reason enough for a party. This February 29th, mix up some Leap Frogs. Pour one shot each of vodka, watermelon schnapps, and blue Maui over ice. Add five splashes of orange juice and stir. The drink will turn the color of a frog.

3. London Buck

This year brings the 2012 Olympic Games in London. To mark the occasion, serve the London Buck. Stir the following ingredients with ice: 2 ounces of gin, 2 dashes of orange bitters, and ½ teaspoon each of sugar syrup and maraschino liqueur. Strain the mixture into a Winco hi-ball glass and serve with a twist of lemon peel.

4. El Presidente Cocktail

No matter which candidate your clientele support, this November everyone will be talking about the 2012 Presidential election. Help keep the political discussion cool with El Presidente cocktails. Place 1 ½ ounces of light rum, a teaspoon each of pineapple juice and Grenadine, and the juice of one lime in a shaker with ice and shake. Strain the drink into a cocktail glass to serve.

5. End of the Road

Probably the most dramatic prediction for 2012, though largely discredited, is the end of the world based on the end of the Mayan calendar. While this is the only event on the list that we don’t actually think will occur, it doesn’t hurt to let your customers drink a toast in appreciation of the fact that the world is still turning. The End of the Road is the perfect way for them to celebrate their continuing existence. Shake well with ice one part each of Frangelico, Pisang Ambon, and whipping cream. Transfer the concoction to a Cardinal cocktail glass and sprinkle a few nuts on top.

Of course, you should continue to serve your old standards, but the New Year is a perfect opportunity to liven up your menu and get your customers talking about your bar.
