Brownie (Cup)Cake

For all you chocolate and cake lovers out there, this is it! Literally a cinch to make, not to mention eat, this Brownie Cake will be gone before you can blink. This chocolate batter can be used for just about anything, from cup-cakes to cakes to an ice cream cake base. You name it, and the batter’s got it!

 

Ingredients:

1-1/2 cups cocoa powder
2 cups hot water
4 eggs
3-1/2 cups sugar
1 cup oil
4 teaspoon vanilla extract
16 oz. coffee rich
3-1/2 cups flour
2 teaspoons baking powder
3 teaspoons baking soda

 

Directions:

  1. Dissolve cocoa in hot water.
  2. Preheat oven to 350°F.
  3. Beat the eggs and sugar together. Add the oil, vanilla extract and coffee rich and mix.
  4. Slowly add the flour, baking powder and baking soda into the batter. Once the batter is combined, add the cocoa mixture.
  5. The cake batter will be loose.
  6. Pour the batter into a 10” x  16” aluminum pan or 2 bunt pans.
  7. Bake for 45 minutes to 1 hour.
