Just the thought of butternut squash pie makes my mouth water. A pie made from orange colored vegetable makes a wonderful side dish with a gourmet look of a delightful dessert. You can even use mini tart pans and serve individual pies to each person at your table. What better way than a squash pie to brighten up you holiday meal?
1 large butternut squash
1 tablespoon butter or margarine
1/3 cup honey
1/4 teaspoon salt
½ teaspoon cinnamon
¼ teaspoon nutmeg
9” pie crust
- Preheat oven to 375°F.
- Cut butternut squash into big chunky pieces. Place chunks in saucepan, cover with water. Let simmer until soft. Peel squash and place in blender. Add all remaining ingredients to blender in order listed. Blend until smooth.
- Pour over pie crust and bake for 45 minutes to 1 hour.
Note: Best when served warm.
