Caesar Pockets

Picnic time is here again! Throw the salad together.  Prepare the dressing before leaving for the picnic and put it all together at the park. I have yet to come across somebody who does not enjoy these Caesar Pockets. All it takes is 10 minutes and you have a picnic winner!

 

Ingredients:

ceasar-pockets

4 pita breads, cut in half

4 cups chopped romaine lettuce

1/2 cup chopped cold cuts

1/2 cup cherry tomatoes, sliced in half

1/4 cup red onion, sliced

 

Dressing:

3 tablespoons mayonnaise

ceasar-pockets

3 tablespoons oil

1 tablespoon sugar

2 frozen garlic cubes

1 tablespoon parsley flakes

1 teaspoon lemon juice

2 teaspoon mustard

 

To make the dressing, combine all the dressing ingredients in a bowl or container and blend using a hand blender. Store the dressing in a container in the refrigerator until ready to use.

 

In a large salad bowl, combine the lettuce, cold cuts, cherry tomatoes, and red onion. Add in the desired amount of the dressing and toss. Spoon the salad into pita halves and serve.
