Product Education: Chef Pans PrimerNon-Stick Pans and Other Non-Stick Cookware

The top choice for popular breakfast items is the Winco 12" Master Cook Fry Pan. Non-stick pans ensure effortless crepe and pancake – flipping and tidy removal of egg dishes. This pan is also the ideal size for most restaurant breakfast offerings. Other items, however, call for equipment without non-stick surfaces. Any pan that you plan to use for sauces that need to be aerated should lack a non-stick surface to prevent interference with whisking. Likewise, professional-grade woks frequently feature metal surfaces since the intense heat generated by the shape of a professional wok gently browns stir-fry vegetables to perfection but can destroy non-stick materials. A Fresh Look at Cast Iron Cookware

Posted October 31, 2011 11:00 AM |

Ever since I watched my grandmother cooking breakfast in a cast iron skillet, I’ve associated good, hearty food with cast iron cookware. However, when I got married and set up my own home and commercial kitchens, I was seduced by bright and shiny stainless steel, and used only stainless for many years. Recently, I bought a cast iron skillet and Dutch oven, and a new world has opened up. I’m now convinced that every kitchen should have at least one piece of cast iron cookware—both in a home kitchen and as standard restaurant equipmentA Fresh Look at Cast Iron

Cast Iron Cookware Is the Original Non-stick Cookware

Cast iron cookware is the original non-stick cookware. When seasoned properly, cast iron cookware is naturally non-stick. In fact, if your food sticks to a cast iron skillet or Dutch oven, then it is not seasoned correctly. Seasoning is done by rubbing oil into the pan and then heating it. This seasoning process makes the pan non-stick and also keeps it from rusting. Much of the cast iron cookware you find in stores or sold as restaurant equipment is labeled as pre-seasoned. However, this is just a very light pre-seasoning that will keep the pan from rusting, but does not make the pan as non-stick as you will want. So, even if you buy a pre-seasoned pan, you will want to season it yourself. ...continue reading

A properly stocked kitchen includes a variety of professional knives. Each knife has its own job, from the serrated bread knife down to the all-popular Chef knife. Tiger Chef's wide selection of knives proves that all knives are not alike, from the blade length and shape, to the handle, each professional knife is unique in its presentation.

Cook’s knives were originally made for disjointing chickens, meat, etc. However, today it is used for slicing, chopping, and mincing chicken, meat, fruits and vegetables. Cook’s knives usually measure anywhere between 6”-12”long.

Boning Knife: With its sharp point and narrow blade, boning knives are made for removing bones from fish, poultry and meat. Measuring between 4” – 6 1/2” long, the short length makes it easier to maneuver and gives you more precision for removing the bones.

Cleavers: With its large, rectangular blade and a tough edge, a cleaver is made to hack through bones and withstand the repeated abuse. Cleavers are also great for crushing things such as garlic, since it has the large blade and will not crack or bend out of shape.

Paring Knife: Similar to a chef’s knife, yet smaller in size measuring only 2- 1/2”-4”, ...continue reading

Microwave Ovens- A Staple in Food Establishments

Posted February 18, 2011 9:00 AM |

Living in a fast-paced society, where everybody is always on the run, it would only make sense to have all your needs on the run as well. Whether it’s for a quick scrambled eggs and bacon breakfast, a short lunch break with a slice (or two) of pizza and fries, or a pleasant night out at an upscale restaurant with family and friends, most people have no time, or don’t want to have time to wait for more than two minutes before digging in.

Since food preparation is your source of income and timely service to your customers is of the essence, a commercial microwave oven is a necessity. It is simply the most practical piece of equipment to own when you’re running against the clock. No matter what kind of food establishment you own, food always has to be either defrosted or re-warmed and dashed out to the anxious costumer. I would venture to say that in 92% of the cases when a microwave oven is used, the customers have no idea that the food was cooked, frozen and now defrosted and warmed up once more in a microwave.
