Eclectic Recipe Wins TigerChef Video Contest

Chef Brad Halsten earned the $1,000 grand prize in the TigerChef Video Contest with his California BBQ Burger recipe, a mouthwatering and creative twist on the California burger that he serves at his restaurant, The Burger Dive. His expert combination of spices and meats sets his invention far above conventional barbecue recipes. Halsten’s video stood out from those of many talented professional chefs, whose submissions included restaurant equipment demonstrations, signature recipes, and cooking techniques. The runner-up, the Houston Zoo’s Executive Chef Shane Miller, rEclectic Recipe Wins TigerChef Video Contesteceives a $250 TigerChef gift certificate for his Southwest Blackened Tenderloin.

This recipe is one of my family's favorite.  Our favorite way to cook is using a Texas beef rub but we also like the soup as well.  It is a no brainer and easy to put in oven and get other things done while cooking.  it can be frozen or cooked ahead of time and re-heated quickly but do not overcook when re-heating.  Very tasty with a good potato or sweet potato side dish and green veggie.

This is a recipe I came up with several years ago, and it's had RAVE reviews each time I've served it.  People cannot believe how easy AND quick it is to make, too.  It is also non-dairy and gluten free, and relatively inexpensive.  It should appeal to many people.

Ingredients:

4 boneless, skinless chicken breasts, cubed
Few tablespoons of desired oil for sautéing the chicken
Salt & pepper to taste
2-13.5 oz. cans "Chaokoh" Coconut Milk (I have tried other brands, but this one has the thickest and creamiest consistency)
1- 20 oz. can pineapple chunks
1 T yellow curry powder (more or less to taste

UPS? Or a Bad Case of Laziness?

We got an interesting email last week that we'd like to share with our readers. One of our customers ordered a Keurig B30 Mini Personal Single-Serve Brewing System and we shipped it with UPS. Our customer emailed us to let us know that when UPS came to deliver the package, instead of walking up to his front door and ringing the bell, as would be expected from any decent delivery guy, especially one that is delivering a package containing a delicate coffee maker, he tossed the package 15 feet in the air and it landed on the hard cement on the other side of his fence!UPS? Or a Bad Case of Laziness?

Now, to be perfectly honest, UPS is quite fair with their claims process. Had the package been damaged (our customer notified us later that thankfully, it was not) we would have gotten our money back in no time in order to provide him with a new coffee maker. As we have no idea who the driver was, we forwarded the complaint to our UPS account manager for further action. Are we confident that this won't happen again? Definitely not. Was the driver reprimanded or penalized for the way he treats deliveries? We can't imagine. So what can be done to ensure this doesn't happen again? Absolutely nothing.

Unfortunately, UPS drivers are the among the most underpaid, overworked work bracket so we can't actually blame them. Or can we? Can UPS take responsibility for each of their thousands of drivers across the United States? Who do we blame here? ...continue reading
