Chocolate and Vanilla Mousse Parfait

Chocolate Mousse Ingredients
- 2 teaspoon gelatin

- 6 tablespoons cold water
- 2 cups liquid topping or heavy whipping cream
- ½ cup sugar
- 2/3 cup Dutch process cocoa
- ½ teaspoon instant coffee
Vanilla Mousse Ingredients
- 1 ¼ teaspoon gelatin
- ¼ cup cold water
- 1 cup liquid topping or heavy whipping cream
- ¼ cup sugar
- 2 teaspoons vanilla extract
- Grates chocolate for garnish (optional)
Chocolate Mousse
Pour the water into a small pot. Sprinkle the gelatin over the water. Let it sit until the gelatin is translucent, about 3-5 minutes.
Heat the gelatin mixture over medium-low heat, stirring and scraping the sides occasionally until the gelatin is completely dissolved. Set the mixture aside.
In a large bowl, using an electric beater, beat the sugar, cocoa, instant coffee, and topping or cream, until soft peaks form. Add the gelatin mixture and beat on high until stiff peaks form. Set aside.
Vanilla Mousse
Pour the water into a small pot. Srinkle the gelatin over the water. Let it sit until the gelatin is translucent, approximately 3-5 minutes.
Heat the gelatin mixture over medium-low heat, stirring and scraping the sides occasionally until it is completely dissolved. Set the mixture aside.
In a large bowl, using an electric mixture, beat the topping or cream, sugar, and vanilla extract until soft peaks form. Add the gelatin and beat on high until stiff peaks form.
To serve
Spoon some chocolate mousse into a dessert glass; top it with a spoonful of vanilla mousse. Repeat the layers once more. Finish with a dollop of chocolate mousse. Garnish the mousse with chocolate shavings if desired.
