Cinnamon Orange Buns
Holiday calories don’t count- right? The orange spiced buns bake together to form a heavenly beautiful round flower-like cake- a great way to end a holiday meal. Want to serve them as individuals? No problem. Instead of baking them in a round pan, place them on a large cookie sheet, leaving a 1-1/2” space between each bun.
Ingredients:
¾ cup orange juice
½ cup butter
½ cup sugar
1 tsp salt
½ cup warm orange juice
4 1/2 tsp dry yeast
5 to 6 cups flour
2 eggs
2 Tbsp grated orange rind
Directions:
In a 2 qt saucepan, combine first 4 ingredients. Stir over medium heat until sugar dissolves. Remove from heat, transfer to a large bowl and let cool to room temperature. In the meantime, pour ½ cup warm orange juice into a bowl and sprinkle yeast over it. Let stand 5 minutes until yeast bubbles.
Add 2 cups of flour into large bowl, and mix. Beat in eggs and orange rind. Stir in yeast and orange juice mixture. Gradually mix in remaining cups flour to make soft dough. Transfer dough on to lightly floured surface and knead 10-15 minutes until dough is smooth. Place dough into a well-oiled bowl, turning dough until all sides are oiled. Cover and let rise in warm place for 2 to 2-1/2 hours.
Filling:
½ cup butter, melted
2/3 cup brown sugar
2 tsp cinnamon
2 tsp grated orange rind
1 cup raisins
In a small bowl, combine sugar, cinnamon, orange rind, and raisins.
After dough has risen, punch down and divide in half. Roll 1 half of the dough, on a floured surface, into an 8 x 16” rectangle. Spread half of melted butter over dough and sprinkle half of the filling mixture over the butter.
Roll like a jelly roll. Cut into 12 1-1/4” slices and place cut side down in a greased 8” round cake pan. Place 9 slices around pan and 3 in the center.
Repeat with second half of dough and place in a second round cake pan. Cover pans and set aside to rise for 1 ½ hours.
Bake at 375°F for 35 to 40 minutes. Remove from oven and cool.
Glaze:
1 ½ cup confectioners’ sugar
1 Tbsp butter, softened
¼ cup orange juice
Beat confectioners’ sugar and butter. Add orange juice and mix until smooth. Drizzle over buns. Best when served warm.
Yields: 24 buns or 2 8” flower-like cakes
