Double Chocolate Pecan Waffles

July 14, 2010 11:00 AM

These waffles are anything but typical. They make a great breakfast! Top it off with a scoop of vanilla ice cream and drizzle some chocolate syrup over it for an indisputably decadent dessert!

Ingredients:

1/4 cup oil
2/3 cup sugar
2 eggs
1 1/2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
1 1/4 cups milk
2 tablespoons vanilla sugar
3 tablespoons cocoa
1 teaspoon chocolate liqueur
1/2 cup chocolate chips
1/2 cup chopped pecans

Directions:

1.       In a large bowl, combine all ingredients, other than the chocolate chips and chopped pecans, and mix thoroughly until batter is smooth.

2.       Follow the manufacturer’s instructions to determine exactly how much of the batter to pour into the waffle maker at a time.

3.       Sprinkle some chocolate chips and chopped pecans over the batter before closing the waffle maker.

4.       When done, remove the waffle. Continue making waffles until all the batter is finished.

5.       For dessert, place a scoop of ice cream over 2 waffles, and drizzle some syrup over the ice cream.
