Marinated Grilled Vegetables

Although grilled vegetables are thought to be cut out for barbequing, they are just as good when they are grilled in the oven. They make a superb side dish to pretty much any main dish. The colors will make your entire dinner more enticing.

 

Ingredients:

2 zucchinis

2 yellow squash

1 eggplant

2 red peppers

2 yellow peppers

2 green peppers

2 Spanish onions, cut into wedges

10 to 12 mushrooms sliced

 

Marinade:

½ cup olive oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon basil

1 teaspoon sugar

 

Directions:

  1. Slice zucchinis, squash, and eggplant diagonally.
  2. Cut peppers into quarters.
  3. Combine marinade ingredients.
  4. Coat the vegetables.
  5. Marinate for a minimum of 2 hours. The longer they marinate, the tastier the vegetables will be.
  6. Place all vegetables onto a cookie sheet in a flat layer and bake at 450° F for half an hour.

 

Note: For black grill design, place vegetables directly on oven rack or grill vegetables on George Foreman.
