Mocha Chip Meringues

Do you ever find yourself with left over egg whites? Well, why not try these heavenly tasting meringues. It combines the rich taste of coffee and chocolate. When you get a craving for something sweet, grab a meringue instead of chocolate and save yourself some calories. Like most meringues, there is no margarine or oil. It’s just one of those delicious wonders.

 

Ingredients:

2 egg whites 
1/8 teaspoon cream of tartar
½ cup sugar
1 tablespoon instant coffee
1 teaspoon vanilla extract
3/4 cup semisweet chocolate chips
3/4 cup slivered almond

 

Directions:

Preheat the oven to 250°F. In a large bowl, beat the egg whites until they are foamy. Add the coffee granules and the cream of tartar. Beat the mixture for 2-3 minutes or until soft peaks form. While the mixer is running, beat in the sugar 1 tablespoon at a time.

Once all the sugar has been added, beat the batter for about 5 minutes or until the mixture is still and glossy. Beat in the vanilla extract. Using a rubber spatula, fold in the chocolate chips and the nuts.

Using a piping bag, pipe small blobs of the mixture onto parchment lines baking sheets spacing them about 1 inch apart. Bake the meringues for 1 minute or until crisp. Turn the oven off and leave the door slightly ajar, allowing the meringues to cool completely.

Store the meringues in an airtight container. If desired, sprinkle cookies with espresso coffee powder before serving.
