Pepper Chicken Linguini

It’s that time of week again when you go through all the leftovers in your refrigerator. By the time Friday comes around, you’re sure to find some odds and ends. Why not throw together a complete meal by combining your leftover pasta and chicken with some fresh veggies and a home-made dressing?

 

Ingredients: 

  • 1 grilled chicken cutlet
  • 1 cup cooked linguini or spaghetti
  • 3 scallions
  • 1 red bell pepper, thinly sliced
  • 1 yellow/green bell pepper, thinly sliced
  • 2 cups green cabbage, shredded

 

Remove the heads of the scallions before slicing them in half. Cut each half into thin strips.
Cut the chicken cutlet into thin strips as well.
In a large mixing bowl, combine the linguini, vegetables and chicken strips.

 

Dressing:

  •  ¼ cup soy sauce
  • 2 Tablespoons oil, preferably sesame
  • 1-1/2 Tablespoons honey
  • 1 clove garlic, crushed
  • 2 Tablespoons toasted sesame seeds

 

Combine ingredients and mix thoroughly.
Pour desired amount of dressing over salad and toss until coated evenly.
