Plum Granita

What can be better than a frozen dessert on a sunny, hot summer day? Granita is an elegant and refreshing dessert that originated in Italy.

 

Ingredients:

2 cups water

¾ cup sugar

1 cup pureed red plums, strained to remove skin

1 tablespoon lemon juice

 

Directions:

Combine the first two ingredients in a saucepan. Turn the flame on high, bringing the sugar and water to a boil. Stir until the sugar is fully dissolved. Turn the flame down and allow the mixture to simmer until it is syrupy and clear (approximately 5 minutes). Turn off the heat and let the syrup cool.

Once cooled, add the plum puree and lemon juice to the sugar syrup and mix. Transfer the mixture into a loaf pan and place it in the freezer.

After about 45 minutes, use a fork to scrape the ice crystals that have formed on the top of the mixture. Return the pan to the freezer, and repeat this process every 30-45 minutes, until there is no liquid left on the bottom of the pan. Spoon the granita into serving glasses and serve right away.

Granita can also be made using raspberries, strawberries, cherries, or any other acidic fruit.

Tip: Make sure to use a fork when dealing with the granita, as your hands will cause the ice to melt.

Tip: Chill the pan in the freezer before starting the recipe.
