Plum Peach Summer Soup

Love soup but find it too hot to eat on a summer day? Go for the fruit soup instead! Absolutely refreshing and delicious! Perfect for serving to your guests on a hot summer day! You can even pour some into a cup and sip it with a straw- just like a smoothie!

Feel free replacing plums and/or peaches with any other summer fruits.

 

Ingredients:

3/4 lb. plums, peeled, pitted, and cut into chunks

3/4 lb. peaches, peeled, pitted, and cut into chunks

1 cup water plum-peach-summer-soup

1 cup dry white wine

1”-2” long cinnamon stick

1 1/2 tablespoon lemon juice

1/3-1/2 cup sugar

1 tablespoon cornstarch, mixed with 1 to 2 tablespoon water

1/4 cup orange or peach flavored liqueur

1 cup dessert topping, unwhipped

Confectioners’ sugar

 

Directions:

  1. Combine plums, peaches, water, wine, cinnamon sticks, and lemon juice in a large pot and bring to a boil. Lower the flame and let simmer for about 20 minutes.
  2. Remove cinnamon stick and use hand blender to blend soup until smooth. Add sugar and bring to a low boil.
  3. Mix cornstarch and water, and add gradually into soup, stirring roughly 6 to 7 minutes, until thickened. Turn off flame. Skim off foam and discard.
  4. Stir liqueur and 1/2 cup of the dessert topping into soup. Cover pot and chill.
  5. Beat remaining 1/2 cup dessert topping and add confectioners’ sugar, to sweeten.
  6. Serve soup topped with dollop of cream.
