While many think of a pressure cooker as an anachronistic tool grandmothers used—and sometimes misused—the new reality is that pressure cookers are in vogue again. They have found their way into the professional kitchen as an adjunct to standard

One Iron Chef cook, Ming Tsai, said in a recent interview, “My newest favorite toy for braising is a pressure cooker….If my eyes were closed and someone gave me pressure-cooked duck legs and then something that had been braised for three hours, it would be really hard to tell the difference.” High praise for this steamy pot!

4 Cooking Tips For The Novice
The best cooks are those who believe in themselves, do not get intimidated by the kitchen and jump right into it without prior experience. For all the first timers out there, here are some tips to help you get started on the right track.
1)
Believe in yourself and don’t let anyone convince you otherwise. Cooking is much easier than it looks to be although restaurants would love for you to believe that cooking is made only for the experts. Statistics show that close to half of everyone’s food plan goes towards restaurants and take-outs.
2) Don’t kid yourself. Cookbooks can be pretty intimidating. Take it one step at a time and start with the most basic cookbooks available. One that will walk you through the cooking process, step by step, one with pictures that look appealing to you.
3) Before you start cooking, make sure to read through the entire recipe, ingredients and directions included. This may sound obvious but it is so very important to read through it first, that I can’t stress it enough. Otherwise, what happens is that you realize halfway through the recipe that you’re missing an ingredient or one of the cooking utensils and then you can wave good-bye to your cooking plans. ...continue reading
