Refreshing Fruit Salad (Treat!)
A great, quick and healthy dessert that’s perfect for any time of year. For the summer months, place the fruits in a plastic cup with an upside down spoon in the center. Once frozen, remove the cup and you have a great, healthy, refreshing after-school treat. What better way than a frozen treat to get your kids (and yourself)excited about eating fruits on any given day.

Ingredients:
1-16oz. container strawberries in sauce
2 small cans mandarin oranges
2 cans pineapple tidbits
6 to 8 yellow apples, diced
1 cup green grapes
1 cup red grapes
2 kiwis, diced
1 banana optional
Northern Style Potato Salad
For some reason or another, potato salad has become a summer outdoor staple. No barbeque or picnic can be complete without a great potato salad side dish. Here’s a potato salad with a twist that is healthier and lighter than the traditional one. It is great at any meal, but especially lovely besides lamb or veal.
Ingredients:
6 Yukon Gold potatoes, unpeeled
8 radishes, thinly sliced
½ medium onion, thinly sliced
1 ½ c cooked peas
2 hard-boiled eggs, in wedges
3 Mediterranean cucumbers, thinly sliced
2 Tablespoons fresh dill, sliced

Creamy Coleslaw
Coleslaw is a staple for every summer meal, especially for barbeques and picnics. Since I love coleslaw, I was on a mission to find the most awesome coleslaw recipe ever! You know the ones that taste store bought, but are actually homemade? I must have gone through about 23 recipes until I came across this one. Mission finally accomplished:)

Ingredients:
1 bag Dole Classic Coleslaw
Salt
1/3 cup sugar
3 heaping tablespoons mayonnaise
2 tablespoons vinegar
2 tablespoons lemon juice

Taco Chip Salad
This taco salad is a perfect complement to your Easter fare - it is meatless which makes it a great choice for any vegetarian!
The fresh garlic adds a zesty tang to the salad. However, if you’re not a fan of garlic (gasp!) you can substitute the fresh garlic with garlic powder for a milder taste. For a more elegant occasion, layer the salad, one vegetable at a time, and place it in a glass salad bowl.
Ingredients:
1-16 oz. bag Romaine lettuce
1 yellow pepper, sliced into half rings
¼ cup purple onion, thinly sliced
1-10 oz. box mushrooms
Handful grape tomatoes
1 avocado, sliced
6 oz. taco chips

Just about every meal has some type of salad served along with it. Salads have become a mealtime staple and favorite to many. Each salad comes along with its own pleasant taste, color and texture. This cabbage-mushroom salad is something different yet classy, and full of flavor. Serve it along with your favorite grilled chicken or fish and you’ve got yourself a nice, wholesome meal.

1-2 small box fresh and/or Portobello mushrooms- 4 lbs. shredded cabbage (purple or white)
- Handful of cherry tomatoes, halved
- Olive oil for sautéing
- Salt and pepper to taste
Pepper Chicken Linguini
It’s that time of week again when you go through all the leftovers in your refrigerator. By the time Friday comes around, you’re sure to find some odds and ends. Why not throw together a complete meal by combining your leftover pasta and chicken with some fresh veggies and a home-made dressing?
Ingredients:
- 1 grilled chicken cutlet

- 1 cup cooked linguini or spaghetti
- 3 scallions
- 1 red bell pepper, thinly sliced
- 1 yellow/green bell pepper, thinly sliced
- 2 cups green cabbage, shredded
Caesar Pockets
Picnic time is here again! Throw the salad together. Prepare the dressing before leaving for the picnic and put it all together at the park. I have yet to come across somebody who does not enjoy these Caesar Pockets. All it takes is 10 minutes and you have a picnic winner!
Ingredients:

4 pita breads, cut in half
4 cups chopped romaine lettuce
1/2 cup chopped cold cuts
1/2 cup cherry tomatoes, sliced in half
1/4 cup red onion, sliced
Black Bean and Corn Salad
Beans. Very nutritious and take only minutes to prepare. Being one of the greatest sources of fiber, beans have been proven to help reduce the risk of sugar related diseases such as Type 2 diabetes, and hypoglycemia and lower cholesterol. In addition, they contain a large amount of vitamins and minerals including B vitamins, iron, magnesium, phosphorus, potassium, calcium, and zinc as well as antioxidants.
This great take-a-long salad can make an excellent pot luck dish, or a great main dish. The longer it marinates, the tastier the salad.

1 15 oz. can black beans, drained and rinsed
1 14 oz, can corn, drained or 1 cup frozen corn, thawed
1 red bell pepper, seeded and diced

Spaghetti Salad a la Fromage
I got this wonderful spaghetti salad a ala fromage recipe from a friend of mine. When she told me about this recipe I did a little nose-twisting. Well, determined to prove me wrong, she made it for me. She couldn’t have been more right. This is the most trouble-free, delectable spaghetti salad recipe I ever came across with barely any preparation time! It works wonders for picnics, get-togethers or even for a family dinner.
Ingredients:
1 package spaghetti 
1 package shredded mozzarella cheese
¼ cup olive oil
2 cloves garlic
1 tablespoon salt
1 tablespoon basil
1 can Hunt’s Diced Tomatoes, drained
