Acorn Squash with Orange Pecan Stuffing

This acorn squash with orange stuffing side dish is a definite crowd pleaser.  It’s got it all, from the taste, to the look, to the wonderful aroma- simply delightful! Need I say more?

Ingredients:Acorn Squash with Orange Pecan Stuffing

2 small acorn squash
1/4 cup frozen orange juice concentrate, thawed, not diluted
2 tablespoon brown sugar
1/4 teaspoon ground allspice
Cooking spray
1/3 cup corn flake crumbs
1 1/2 tablespoons coarsely chopped pecans
2 tablespoons low fat butter, melted

Believe it or not, my girlfriend, who never tasted anything green before, literally gobbled them up. These string beans are truly delicious and really simple to make.
 

Ingredients:

1 lb string beans

Oil for sautéing

5 cloves garlic, crushed

¼ cup water

¼ cup soy sauce

3-4 tablespoons sugar
