Soup- The #1 Comfort Food
When you think soup, you think warmth, and nourishment. It’s no surprise that it is the #1 comfort food. Soup can be made of just about anything and served hot, cold, blended, or chunky. What better way to start off a meal than with a nice bowl of hot soup? It is certain to keep you warm and full, especially on a chilly, winter night. Some soups are so full of nutrients that they are complete meals on their own.
On the menu today –Asian beef and noodle soup, sour cream potato soup, creamy green soup, and barley broccoli soup.
Asian Beef and Noodle Soup
Ingredients:
1 lb thinly sliced beef
2 Tablespoons soy sauce
2 Tablespoons oil, divided
2 teaspoons finely grated fresh ginger
2 garlic cloves
4 cups beef broth

Miso Chicken Soup
Miso chicken soup is a nutritious meal in and of itself, prepared in no time at all. By the time it starts boiling, it’s ready to be served. Say good-bye to the Chinese variety and the canned vegetables, and fill up on the Japanese variety with the fresh vegetables.
Ingredients:
6 chicken cutlets, cut into strips
8 cups water
4 stalks celery, thinly sliced
1 lb shitake mushrooms caps, thinly sliced
4 thin carrots, thinly sliced
2-inch piece ginger, grated
1 cup miso paste
1 tablespoon hot sauce
¼ cup toasted sesame oil
8 oz. rice noodles, broken into small pieces
5 scallions, very thinly sliced
Butternut and Acorn Squash Soup
This soup may be a bit time-consuming for an everyday meal, but when it comes to Thanksgiving or any other special occasion, you’ll be happy you took the time to make it. Aside from being delicious, the butternut and acorn squash soup is very healthy and, as an added bonus, is completely fat-free! It’s loaded with vitamins, minerals, and is a great source of protein. The good news is that it freezes very well, so feel free to make it in advance and freeze it too have ready on that festive occasion.
Ingredients:
2 small to medium butternut squash
2 acorn squash
1 large onion diced
1 cup barley, soaked and rinsed
Salt and black pepper, to taste
Garlic powder, optional
Plum Peach Summer Soup
Love soup but find it too hot to eat on a summer day? Go for the fruit soup instead! Absolutely refreshing and delicious! Perfect for serving to your guests on a hot summer day! You can even pour some into a cup and sip it with a straw- just like a smoothie!
Feel free replacing plums and/or peaches with any other summer fruits.
