Acorn Squash with Orange Pecan Stuffing

This acorn squash with orange stuffing side dish is a definite crowd pleaser.  It’s got it all, from the taste, to the look, to the wonderful aroma- simply delightful! Need I say more?

Ingredients:Acorn Squash with Orange Pecan Stuffing

2 small acorn squash
1/4 cup frozen orange juice concentrate, thawed, not diluted
2 tablespoon brown sugar
1/4 teaspoon ground allspice
Cooking spray
1/3 cup corn flake crumbs
1 1/2 tablespoons coarsely chopped pecans
2 tablespoons low fat butter, melted

Mushroom Bread Stuffed Turkey

Steaming a mixture of sautéed vegetables combined with chunks of white bread makes for a wonderful stuffing. Packed lightly into a turkey, ready for roasting, it provides that something extra-special for the Thanksgiving dinner.

 

(1) 10 to 12 lb turkey
2 large onions
2 stalks celery
1 cup water
½ teaspoon salt

 

Basting:

 

¾ cup oil or melted butter
1 tablespoon paprika
Salt and pepper to taste

 

 

 

Mushroom Bread Stuffing

¼ cup butter
2 stalks celery, finely diced
1 medium onion, finely diced
3 cups fresh mushrooms, finely diced
2 cloves garlic, minced
4 slices white bread
Salt and pepper to taste
