Charbroilers are "underfired" broilers, meaning the heating method emits from beneath the grilled plate. They have high input rates and are similar to barbecue grills, in that flames and smoke are present when cooking and striping marks are made on the food. Charbroilers are commonly used for steaks, hamburgers, chicken, fish and other meats. Gas is preferred over electric in these broilers specifically because of the flavor. Temperatures commonly reach above 600 degrees F, which makes them ideal for searing meats perfectly. They do, however, require ample ventilation.
