Griddles

A staple in most establishments, griddles are quite common in their purest form. They're designed to cook a variety of foods, from eggs and bacon to steak and chicken. Manual controlled griddles rely on the cook or chef having a "feel" for the temperature, as there is no thermostat. Throttling (or, thermostatic controlled) griddles make maintaining specific temperatures automatic, and some (considered "snap-action" can hold quite low temperatures).
