The Winco KFP-104 Acero Chef Knife, Short Bolster 10" is an indispensable addition to any commercial kitchen. Designed to provide superior cutting performance, this chef knife boasts a fully forged, full-tang X50 Cr MoV15 German steel blade that is exceptionally sharp and extremely durable.

Having reviewed many Winco knives, I had a pretty good idea of what to expect. However, this knife blew my expectations away. This is easily the best knife Winco has ever made. With this newer design, they also took the opportunity to fix other issues from previous models.
What makes this particular knife stand out, is that unlike Winco's other 10 inch knives, it features a thinner blade with a much thinner tip. Similar to what you would see on their 8 inch knives. This has two effects:
1. With the thinner blade tip, this 10 inch knife is ideal for finesse tasks, like processing onions and tomatoes.
2. The reduced forward weight results in exceptional balance, even with the longer blade.

In addition, unlike other Winco knives I've reviewed in the past, this one came profiled at 15 degrees on each side, which is optimal. No re-profiling was necessary.

-The edge grind is a little uneven, but this has no effect on functionality. And this will even out over time as the knife is re-sharpened.
Fit and Finish: 5/5
+Etching on the knife is smooth to the touch.
-Edges on the top of the blade and bolster need a bit of polishing with fine grit sandpaper.
-Handle integration with the tang is rough. It needs a bit of polishing with some sandpaper.
