Very impressed with this knife, some minor QA issues
This 8 inch chef knife is my favorite from the Winco Acero product line. I've been using one for about 6 months, and just purchased a second one. I love it. It has a couple issues I describe below, and all are easy to fix. This product deserves a 5/5 rating. It outperforms many knives I've seen in the $50+ range.

+sharp right out of the box
-QA issues with etching on some knives (you may or may not have this problem). With respect to chef knives, this is worse than it sounds. Of the 2 8" winco chef knives I own, only one has this issue. The etching on the side of the knife is extremely abrasive making the knife very uncomfortable to work with. 600 grit sandpaper can be used to fix this, then finer grit sandpaper (typically used in autobody work) to repair the cosmetic appearance.
-The bolster runs past the edge of the blade in some cases. This can also happen after many sharpenings. Easy to fix by grinding/filing the bolster down as needed. See video for more details.
-Fit and finish. The edges on the top of the knife are not smoothed. Similar issue on the handle where the metal and plastic meet. This seems to be an issue with the other winco knives I own. It is easily corrected with some 600 grit sandpaper.

Like the other winco Acero knives, this one should not go in the dishwasher. Always hand-wash, and dry with a towel after using.
My new favorite knife
The 8" chef knife is the best size for all round kitchen duty, and this one does not fail to impress. The edge is extremely sharp right out of the package. The weight of the thick non flexible blade with full tang give the knife perfect balance while being just heavy enough to let you know you are wielding a serious kitchen tool without being tiring to use. The handle feels great in your hands with smooth shape and no sharp edges. This utensil will last a lifetime without breaking the budget.
