    I've owned one of these for 15 years, and it's wonderful. Best steel I've ever used. Edges stay sharp between stoning for much longer

    This is an interesting steel, quite different than a typical honing rod. It mildly abrasive coating, such that in addition to straightening your edge, it also removes a bit of material. In a way, it is a hybrid, somewhere in between a coarse honing steel and a ceramic rod.

    In practice, it produces an edge with coarse micro-serations. In most situations, this isn't ideal since it results in the edge not lasting as long. I suggest following up with a fine cut steel to smooth it.

    I am the manager of a meat department in a grocery store. My tools are important. This is simply the best steel I've ever used. Don't kid yourself though this will remove steel though it will be slowly. A sharp blade will stay sharp a very long time between hitting the stones.

    What is the difference between FDick Titan and FDick Diamond steels? Which is more aggressive, or coarser? Which should I choose for my japanese knives?

    For honing a Japanese knife, the F. Dick Diamond Steel is a better choice. Its fine to medium abrasive surface will maintain the edge of the knife more gently and effectively without removing too much material or damaging the delicate edge. Japanese knives benefit from more frequent, gentle honing to maintain their sharpness, rather than overly aggressive honing that can chip or dull the finely honed edge of a Japanese knife.

    As F. Dick honing rods are normally classified as 66 HRC what category would that put the Titan in as far as HRC?
