What's the igniter?
What do the dial's represent? Low = one ring, Medium = two rings, High = three rings?

The difference between two burner grates is for different shapes of the pan or wok. It gives end user more flexible on cookware.
Igniter is the part to light a fire
Dial is the part to adjust the flame. Different angle represents different level of the flame.

How sturdy is this hotplate? Will it support large pots?

Item SLST002 can be used for all the flat bottom pot and plate. It should be sturdy in general, unless your using a curve wok, otherwise it will be fine.
