Wonderful chef knife, I use it almost every day at work, I recommend this knife to a lot of cooks and chefs
I've had this knife for about 3 weeks at the time this review was written, and having used it regularly I am very happy with it! A 12 inch chef knife performs best on large and medium sized foods. It makes chopping potatoes, and slicing red peppers a breeze when you have a large amount of them to go through. Along with a noticeable improvement in fatigue.
Caution: make sure you understand what you're buying. A 12 inch chef knife requires a larger cutting board, won't fit in most knife blocks, won't fit in all roll bags, and requires an extra long honing steel to maintain (14"). It is really only for processing larger quantities of food. It is not very versatile, and not ideal for detailed work. For many folks cooking at home, I expect it will end up in a drawer never to be used - which is really a shame because this is an excellent knife. If you are a home user, I recommend you look at the winco acero 8 inch knife instead. Otherwise, keep reading!

-QA issues with etching on some knives (you may or may not have this problem). With respect to chef knives, this is worse than it sounds. The etching on the side of the knife is extremely abrasive making the knife very uncomfortable to work with. 600 grit sandpaper can be used to fix this, then finer grit sandpaper (typically used in autobody work) to repair the cosmetic appearance.
-The bolster runs past the edge of the blade in some cases. This can also happen after many sharpenings. Easy to fix by grinding/filing the bolster down as needed. See video for more details.
-Fit and finish. The edges on the top of the knife are not smoothed. Similar issue on the handle where the metal and plastic meet. This seems to be an issue with the other winco knives I own. It is easily corrected with some 600 grit sandpaper.

Like the other winco Acero knives, this one should not go in the dishwasher. Always hand-wash, and dry with a towel after using.
I like this for cutting huge chunck of meat.
I ordered this along with some other items. A 12" knife is way way bigger in person than it seems. I don't think I need a knife that big for home chef usage.... but when big jobs come along I will have it. The knife had a really sharp edge right out of the package and a comfy handle. Balance is definitely blade heavy, but what can be expected from such a large knife. The overall feel is that of quality.John L. on 01-12-2015
