An excellent knife that has a great balance and handles very well. It looks like Winco has addressed many of the minor issues with previous versions in this design. This knife is a significant improvement over the KFP-80.
The new half-bolster makes the knife lighter, and doesn't get in the way of the cutting edge. It also makes sharpening much easier. In addition, the knife edge came profiled at 15 degrees on each side, and well-sharpened.
In practice, the knife is a pleasure to work with. It works just as well for rocking, chopping, as it does for finesse tasks, like chopping onions.
If you prefer a longer knife, Winco also makes a 10 inch version - I was impressed with it. You can see my review of it here:
Full tang, half bolster, with classic 3 rivet handle
Material: X50CrMoV5, high carbon stain resistant steel
Overall Length: 13 3/8 inch
Handle length: 5 1/8 inch
Blade length: 7 3/4 inch
Blade width (top-to-edge, at handle): 1 13/16 inch
+Very light weight due to thin blade.
+Tip of the knife is very thin, great for detail work.
+Half bolster makes sharpening easier and doesn't get in the way of blade
+Edge profiled to 15 degrees on each side. Perfect.
-The edge grind is a little uneven. This is also easily addressed when reprofiling.
Fit and Finish: 4/5
+Etching on the knife is smooth to the touch.
-Edges on the top of the blade and bolster need a bit of polishing with fine grit sandpaper.
-Handle integration with the tang is rough. It needs a bit of polishing with some sandpaper.
+Only about $13.
+Good quality metal that holds an edge, hones well, and sharpens easily.
