    I've always been skeptical of herb shears, but reluctantly I'll admit they are faster than a chef knife. Especially if you're processing large quantities. They work well for soft straight herb stalks, like chives or thyme. Oregano on the other hand, still needs its tough wooden stem removed by hand.
