Perfect for heavy duty tasks!

This time of year, I prepare lots of winter squash from the family farm. We have these hybrid varieties with stone hard shells (curing them made them even tougher). It takes several forceful cleaver strikes to get through them. And this thick cutting board is perfect for this task... because I don't want to ruin my countertop. It provides a stable cutting surface that stays flat, no matter how hard I bring that cleaver down on it. Especially when you place a towel underneath it.

In terms of size, a 12 by 18 inch board provides a great balance between having adequate space to work, and having something that is easy to take to the sink to clean. This item is available in larger sizes, though for most situations, I wouldn't recommend going smaller.

Prior to use, this board needs to be cleaned and oiled. It comes with a thin coating of lacquer. It can be removed either with a rough scouring pad, or sandpaper (I prefer sandpaper). To prevent the wood from drying and cracking over time, the board should also be wiped down with a food-grade oil. It will soak up lots of oil the first time, but after doing this, periodic maintenance is easier. I also like to coat my cutting boards with beeswax, which gives a little additional water resistance.

I expect to be using this board for many years to come.
